Behind Herbanchef Catering

Executive Chef Ryan Durham relocated to the Austin Area about 5 year ago. Since settling in Austin he has opened Darcys Donkey and was featured in the Austin Eater's best new restaurants. He took over as executive chef for Pascal’s Catering in 2020. Before that, he spent 25 years in Honolulu creating cutting-edge menus specializing in farm-to-table fare and collaborating on new trends for restaurant of the year. He has a reputation for being a multi-talented chef and has consistently raised the bar at every restaurant he has been at.

Ryan was born in Manassas, Virginia, and raised in the Kansas City, Mo area. After high school, he was stationed in Hawaii in 1992 on a military assignment where he met his wife, Rebecca. Together they have 3 children Darrow, Haley, and Alika. He welcomed his first grandchild Evelyn to the family not too long ago and is enjoying this new phase in life.

During his 25 years in Hawaii, Ryan has been featured on Hawaii’s Kitchen and in Hi Luxury Magazine. His restaurants have been the recipient of numerous awards including 2015 Restaurant of the Year.

Ryan keeps busy in his off time with hobbies and interests such as charcuterie, cheese making, gardening, fishing.
